Dice mangoes in ¼-½ inch cubes. Finely dice the bell pepper, onion, cucumber and jalapeños. Combine these in a large bowl.

In a small bowl, whisk together the lime juice, honey, and 2 teaspoons of toasted cumin seeds.

Add the lime-cumin-honey dressing to the mango mixture and gently toss to combine.
Add the chopped cilantro for freshness and color.

Allow the flavors to meld by refrigerating the salsa for about 30 minutes before serving. (If you can resist digging in!)
Serve however you'd like - as a dip, as a salad (or over a salad), with grilled meats, get creative!
