- 4 boneless, skinless chicken breast
- ½ cup olive oil
- ½ cup lemon juice
- 5 tbsp red wine vinegar
- 6 cloves garlic minced
- 2 tsp ground cumin
- 2 tsp thyme
- 2 tsp oregano
- 2 tsp dried basil
- 1 tsp red chili flakes if desired
In a mixing bowl, combine olive oil, lemon juice, red wine vinegar, minced garlic, cumin, rosemary, thyme, oregano, basil, and red pepper flakes if desired. Stir the ingredients until well combined.
Place your chicken pieces in a large Ziploc bag or a shallow dish. Pour the prepared marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to infuse. For a deeper flavor, you can marinate it for up to 24 hours.
Remove the marinated chicken from the refrigerator and let it come to room temperature for about 10-15 minutes. Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
Allow excess marinade to drip off before placing the chicken on the preheated grill. Grill each side for approximately 6-8 minutes, depending on the thickness of the chicken pieces. Use a meat thermometer to ensure the internal temperature reaches at least 165°F (74°C).
Once the chicken reaches the desired internal temperature, remove it from the grill and let it rest for a few minutes. This allows the juices to redistribute, ensuring a moist and flavorful result.
