Equipment

  • 1 Muffin Pan

Ingredients
  

  • 1 dozen prosciutto slices
  • 1 dozen eggs
  • 1 tbsp olive oil spray

Instructions
 

  • Spray olive oil over the muffin pan
  • Wrap prosciutto slices in each cup, ensuring it covers the entirety
  • Place spinach/kale (or veggie of choice) into bottom of prosciutto lined cup
  • Crack one egg into each prosciutto lined cup, salt/pepper as desired
  • Bake at 375° for 12-15 minutes depending on desired egg doneness
