Sheet Pan Balsamic Chicken and Vegetables

An easy and nutritious weeknight meal

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 bell pepper
  • 1 large onion
  • 1/2 bundle asparagus
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • salt & pepper to taste

Instructions
 

  • Preheat your oven to 425°F (218°C)
  • Cut the chicken and vegetables into bite-sized pieces and set aside.
  • In a small bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, dried oregano, salt, and pepper.
  • Line sheet pan with aluminum foil or parchment paper. Arrange chicken and vegetables on sheet span in a single layer.
  • Drizzle balsamic mixture over the chicken and veggies.
  • Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and the vegetables are tender. If desired, shake up chicken and vegetable half-way through to ensure even cooking.
