Preheat your oven to 425°F (218°C)
Cut the chicken and vegetables into bite-sized pieces and set aside.
In a small bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, dried oregano, salt, and pepper.
Line sheet pan with aluminum foil or parchment paper. Arrange chicken and vegetables on sheet span in a single layer.
Drizzle balsamic mixture over the chicken and veggies.
Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and the vegetables are tender. If desired, shake up chicken and vegetable half-way through to ensure even cooking.
