Homemade Fresh Basil Pesto

- 2 cups fresh basil leaves packed
- 1/2 cup parmesan cheese grated
- 1/2 cup olive oil extra virgin
- 1/2 cup pine nuts or walnuts
- 4 cloves garlic minced
- 1 tbsp lemon juice
- salt & pepper to taste
Over medium heat, toast the pine nuts or walnuts in a dry skillet. Stirring frequently, about 4-5 minutes, until lightly golden. Remove from heat and set aside to cool.
In your food processor or blender, combine the basil, garlic, cooled nuts and parmesan (if using a blender you may want to add the lemon juice and/or a small portion of the olive oil) until mostly smooth.
With the machine running, slowly pour the olive oil into the mixture maintaining a thin, steady stream. Add lemon juice and continue processing until the mixture is well blended.
Season with salt and pepper to taste.
