Ingredients
  

  • 1 lb boneless, skinless chicken breast or thighs cut into bite-sized pieces
  • 2-3 tbsp red curry paste adjust to your preferred level of spiciness
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp red pepper flakes
  • 1 tbsp fish sauce
  • 1 cup plain Greek yogurt
  • salt & pepper to taste
  • fresh cilantro or basil for garnish (optional)

Instructions
 

  • In a skillet or pan, heat the oil over medium heat.

  • Add the red curry paste and sauté it for a minute or two to release its flavors.
    2-3 tbsp red curry paste
  • Add the minced garlic and red pepper flakes, and continue to sauté for another minute until fragrant.

  • Add the chicken pieces and cook until they are no longer pink, stirring occasionally.

  • Reduce the heat to low and stir in the fish sauce and plain Greek yogurt.

  • Let the mixture simmer for about 10-15 minutes, or until the chicken is fully cooked and the sauce thickens slightly.
  • Season with salt and pepper to taste.
