- 1 lb boneless, skinless chicken breast or thighs cut into bite-sized pieces
- 2-3 tbsp red curry paste adjust to your preferred level of spiciness
- 1 tbsp olive oil
- 4 cloves garlic minced
- 1 tsp red pepper flakes
- 1 tbsp fish sauce
- 1 cup plain Greek yogurt
- salt & pepper to taste
- fresh cilantro or basil for garnish (optional)
In a skillet or pan, heat the oil over medium heat.

Add the red curry paste and sauté it for a minute or two to release its flavors.

Add the minced garlic and red pepper flakes, and continue to sauté for another minute until fragrant.

Add the chicken pieces and cook until they are no longer pink, stirring occasionally.

Reduce the heat to low and stir in the fish sauce and plain Greek yogurt.

Let the mixture simmer for about 10-15 minutes, or until the chicken is fully cooked and the sauce thickens slightly.
