Breakfast, brunch or dinner- this high-packed delight is the perfect option. Make it for dinner and this casserole is large enough to enjoy for breakfast or lunch the next day. Lets explore this simple recipe’s nutrition, necessary ingredients and potential customizations to create your own fusion of flavors.
I eat eggs everyday. Eggs are an excellent source of high-quality protein, did you know that they contain all nine essential amino acids? They are also considered a nutrient-dense food, meaning the amount of nutrients to calories is a good ratio. One of these nutrient is choline for which eggs are considered the best source. Choline is crucial for brain development and function, as well as liver health. Ground beef is also a great source of protein. Look for leaner ground beef to make this dish a bit healthier. You then have the choice of other vegetables for extra nutrients! Cheese is optional here and I prefer to leave it off to keep this recipe leaner. But don’t let me make you feel guilty- feel free to sprinkle 1/2 – 1 cup on top of the casserole before throwing it in the oven. Cheese itself is a good source of nutrients including calcium, protein, phosphorus, vitamin B12, and zinc.
This recipe is super easy to make. Perfect for a week-night dinner, a weekend breakfast or a late-Sunday meal-prep for the week. Check it out:
- Lightly cook your onions with garlic in a large skillet. Brown the ground beef in the same skillet. Make sure to season your beef after you drain the fat! Not doing so will allow much of the seasoning to drain off.
- Whisk your eggs with milk and salt. The milk and salt will make your eggs extra fluffy!
- Mix the ground beef in- it may not look very tasty at this point, but it will taste great, so do not fret!
- Pour that into your casserole dish, sprinkle with cheese (optional) and throw it in the oven!
There is plenty of room for customization and variation when it comes to this dish! Off the bat, this would be great with additional veggies. Bell peppers, carrots, corn and potatoes come to mind. I keep it simple but encourage you to experiment. I enjoy this with sriracha on top but I am sure any hot sauce would be delicious. It could also be garnished with fresh parsley or chopped green onions. If you choose to top this bad boy off with cheese, cheddar, mozzarella, Monterey Jack, Colby or Swiss are all valid options. Each will offer a slightly different texture and taste to your finalized casserole. Remember that moderation is key, and adding cheese should be in line with your dietary goals and preferences.
When I make this casserole, I often pair it with a salad. The salad is a nice fresh side for the hearty protein packed casserole. This would also be great served over rice or even mashed potatoes.
I must mention that this casserole reheats excellently. Make it for breakfast or dinner and you can make a whole other meal out of it the next day with a new side. This is quite a large recipe as I actually meal prep this dish. We make it for dinner and then I have lunch for the week with the leftovers.
